I once made some grenadine caviar for a vodka / lychee cocktail. I used 1/2 cup grenadine syrup that I mixed with 1/2 cup of an alginate syrup (sodium alginate + water brought to a boil) and then dribbled it into a calcium lactate bath. It worked fine.

For the grenadine caviar. I used 1/3 cup grenadine and added 55ml of sodium alginate bath to the grenadine. The sodium bath was simply made with 2gm of sodium a. and 2 cups of water. Sometimes getting sodium alginate to dissolve in other liquids is hard. Hopefully this helps you.

I have tried once to do basic spherification with grenadine but I failed miserably! Can you please give us more details? Great picture by the way :)
