This new restaurant in Las Vegas located in Town Square has several items on the menu that are cooked with liquid nitrogen including this Nitro Caramel Popcorn. If you watched Professor Destroys Laptop you saw just how fast this liquid can freeze whatever it comes into contact with. The temperature of liquid nitrogen is -196C (-321F). I you put your hand in it it almost feels as though it's not touching you. This is due to the Leidenfrost Effect. When you pour it onto the popcorn it makes it extremely cold without actually soaking in. When manipulating liquid nitrogen you have to keep in mind that because of its extremely low temperature, careless handling of liquid nitrogen may result in cold burns. The same way you're being carefull when deep frying in hot oil, be carefull when deep freezing in liquid nitrogen...
