The peel doesn't seem very tasty...
It just tastes awful! Its not that bad with a basic spherification but for a reverse one, you HAVE to use calcium lactate... Calcium lactate is simply a superior product than calcium chloride. My guess is that chloride is much cheaper. Its the only reason I see to explain why they sell it in molecular gastronomy!! RIPOFF!!!
What's wrong with calcium chloride??? He seems to know his shit!!?
Come on... you cannot add calcium chloride in a solution that you will actually eat!!
